Cauliflower Potato Salad

So you want a low carb side dish, but don’t want to skimp on the flavor.  Try this Cauliflower Potato Salad, it has all that great potato salad flavor with less starch.

This is the perfect paleo recipe to go with grilled grass fed burgers or a nice ribeye steak.



1 – 16 oz. bag of frozen cauliflower or about five cups cut cauliflower

1/4 to 1/2 cup of diced onions

1 tablespoon dill pickle relish or on pickle diced

1 teaspoon pickle brine

2 hard boiled eggs diced

1 teaspoon Dijon mustard

3 pieced of celery diced

2 to 3 strips of crisp bacon diced

1/4 to 1/2 cup olive oil mayonnaise or bacon mayo


Steam the cauliflower until you can pierce the pieces easily with a fork. Transfer to a mixing bowl, add diced onions and salt and pepper to taste.  Let cool about 5 minutes

Add all the ingredients except for the mayonnaise.  Mix well.  Slowly add the may until everything has a nice even coating. Add more seasoning as needed. Transfer to the refrigerator until cool, 24 hours is best.


This cauliflower potato salad will go well with a great burger or a juicy steak.  And, you can enjoy it guilt free as there is no soybean oil or other industrial oils in the dish.
