I saw a recipe for Chocolate Coconut Milk Ice Cream on Divine Health about a month ago and have been wanting to make it ever since. I made it and it turned out great. This is going to be a regular Sunday treat this summer. I did simplify the recipe, if there is an easier way to make something, I’ll find it.

Pinch of salt
1/3 cup maple syrup
3 tablespoons coco powder
2 cans whole fat coconut milk
2 teaspoons vanilla extract
Mixing the batter is a snap. I used our KitchenAid Mixer with the wire whip. Place the 3 eggs in the mixing bowl and beat well (about 1 or 2 minutes). Slowly add the maple syrup, feel free to use honey, brown sugar or regular sugar instead. Add the two cans of whole fat coconut milk, the coco powder, salt and vanilla extract. Mix the batter well.
Transfer the batter to your ice cream maker. I like the KitchenAid Ice Cream Maker Attachment. Just store it in the freezer and it is ready to make frozen treats at anytime. Follow the directions for making ice cream in your mixer. I find the coconut milk ice cream tends to take just a little longer than diary based ice cream about 15 minutes.
This is a great treat. We like to have a treat like this about once a week, usually Sunday. You will never miss the dairy in this recipe. There is a slight coconut flavor, but I think it goes well with the chocolate.
Treats like this can fit into a Paleo Diet. Just plan on having this after a nice long hike, having some carbs after exercise can be a good thing – just don’t overdo it.
