Nice post which Pack the salsa in the jar releasing a natural brine. Leave the salsa about 1 inch from the top of the jar. Top off with a bit of salt water if the brine doesn’t cover the salsa. Place the lid on the jar. Thanks a lot for posting.

Alina,
The chicken will release juices as it cooks, ensuring it would get burnt on. However, feel free to use a bit more grease if you want to.
Enjoy!

Hi,
Isn't the pot going to burn on the bottom with just 1 or 2 tbs of grease?
I am new to cast iron/Dutch oven cooking and I just want to get sure that I do not damage my pot.
Thank you.

I made this last night & it was wonderful! Kids and dh were trying to sneak a bit this morning before I work up-lol! I was a little unclear on the quantity of spices; so I added 1T garlic, 1t salt, 1t pepper, 1t thyme. I will increase salt & thyme the next time I make this...probably to 1T each (except the pepper; will keep that at 1t). Thank you so much for posting it.

I feel there is a place in the paleo diet for potatoes and sweet potatoes - certainly not every day or even every week. Tubers are a grey area that each person needs to decide if they can eat them and remain fit and healthy.
