Fast Paleo Meal: Baby Bok Choy and Chicken

This is a fast delicious meal.  Bok choy is crispy and tasty when cooked

Prepare the Bok Choy.  I like to cut jut a little of the bottom of the bok choy, then cut it in half.  Put it all in a colander and rinse well.

In a skillet, heat up some bacon grease (coconut oil would work too) on medium high.  Once the skillet is heated up throw in the bok choy and some minced garlic.  Turn frequently to cook all sides of the bok choy.  Check the bok choy after a few minutes (the tops should be wilted and stock crisp and tender).  Once the bok choy is almost done throw in as much cooked chicken as you want (I like it cut into really small chunks) and some bacon if you have some.  Should just take one more minute or so to heat up the chicken and finish the bok choy.  Season to taste.

Enjoy the “bok bock” as my 2.5 year old daughter calls it.
