I love avocados, they taste like butter from trees. Guacamole is taking the deliciousness just a step further. This is a great addition to a paleo diet, a topper for just about anything. It tastes great on eggs, meat, salads or just by itself. And, it is so easy to make.
3 ripe avocados, 1 tablespoon olive oil mayonnaise, 2 tablespoons salsa, juice of 1/2 lemon and 1/2 diced onion (optional).
Cut the avocados in half, remove the seed and skin. Throw the avocados in a bowl and mush them up with your hands (you could try a potato masher, but where would be the fun in that?) Mix in the remaining ingredients and enjoy.
