Hot Artichoke and Goat Cheese Dip with Bacon

 

Here is easy and delicious dip I found over at Divine Health.  We are enjoying this as part of our New Years celebration.  It does have some dairy in it, but most of it is goat cheese (which most people tolerate better than cow’s).  I just love goat cheese and artichokes (and bacon too).  

The full recipe is here.  The only addition I made was to add some chopped up bacon.  Also, I used my VitaMix instead of a food processor(only because it is so much easier to clean).  And, it wasn’t as browned as much as I wanted after 30 minutes so I turned on the broiler for a few minutes at the end.  

The recipe made three bowls like the one in the picture above.  We had it with celery and peppers, but this tasty dip would be good with just about anything.  Enjoy and have a happy New Year.
