I really enjoy sweet potatoes, and eating them as fries just takes it to the next level. These are very simple to prepare and may become standard in your post-workout meals.
Peel potatoes and cut into fries. Use a very sharp chef’s knife or a Restaurant Quality French Fry Cutter. I find that cutting the sweet potatoes in quarters makes running them through the fry cutter much easier.
Optional: soak in water for 30 minutes to reduce starch content.
Heat oven to 400 degrees.
Transfer fries to a cooking sheet with a lip or a baking pan, loosely arranged not more than two fries deep. Sprinkle with paprika and cinnamon. Pour your preferred cooking fat over the the fries. For 3 large sweet potatoes I used about 1/4 cup of fat. I like to use bacon grease or grass fed butter, however, beef tallow and coconut oil are good options too. Mix fries well with your hands to coat evenly with spices and oil.
Place in oven and set timer for 15 minutes. After 15 minutes stir fries and return to the oven. Continue to check and stir fries every 10 minutes until cooked to your liking. I find about 40 minutes of total cooking time to work well for us.
These fries are perfect and they are great dipped in some softened grass fed butter with just a bit of maple syrup. I think you’ll find these go well with many paleo entrees.
